I saw a documentary that mentioned this "delicacy". The shark isn't buried, it's left to ferment hanging from the roof…

Indeed. According to the documentary I saw, that shark's flesh is poisonous when raw. Fermentation gets rid of the poison just as cooking would – but slower and smellier
